Why are people in the insurance business and wedding photography business disliked?
Funny. I don't know anyone who dislikes wedding photographers. If they do, maybe it is because some of them are way overpriced?
Insurance people, though, it is obvious. Insurance is, generally speaking, WAY overpriced, and these people are specifically trained to find excuses NOT to pay on claims. It is not their fault, but the nature of their job results in most of them screwing people over for large amounts of money. Naturally people are going to dislike them.

Those are two very different industries.
Insurance is pretty simple. It’s like any other sales job (cars, real estate, etc.). There’s a perception that sales people want consumers to opt for the highest cost product so that the sales person makes more money. In insurance, there’s also the issue that insurers will put up a fight when asked to pay a claim, which isn’t the insurance agent’s fault per se, but if you’ve ever had to fight for the coverage you’re entitled to it can leave a bad taste in your mouth.
I’m not aware of an overriding poor opinion of wedding photographers, but I can tell you why I hate mine. She was too passive at directing the shots so we ran out of time to get everything I wanted. She lied about how long it would take to get my order, and then refused to return our calls/e-mails for three months. She ignored us until our finished product came in when all I wanted was an update on when it was coming.
